I made this without measuring so these are my guesses on amounts
Dry
6 Cups rolled oats
2 - 4 Cups chopped nuts & seeds (I use a mix of peanuts, sliced almonds, chopped pecans, sunflower seeds and sesame seeds
2 - 3 cups loose large flake coconut
Wet
1 2/3 C apple sauce
1/2 C brown sugar (needs more sugar)
1 tsp salt
2 tsp cinnamon
2/3 C olive oil or melted coconut oil
Instructions
Heat oven to 325 F
Mix wet ingredients thoroughly then pour dry ingredients over and mix well with a rubber spatula.
Spread on two lined rimmed cookie sheets and place in top 1/3 and bottom 1/3 of oven.
Bake 45+ minutes stirring and swapping pans top to bottom every 15 minutes.
Its done when the coconut is well toasted and the granola looks dry. It will still feel soft and flexible until it cools. If you are unsure pull a small cluster out and stick it in the fridge for 5 minutes. If it crisps up your granola is done.
